CHICKEN CASSEROLE 
3 c. diced cooked chicken
2 c. chopped celery
1/2 c. salad dressing (Miracle Whip light)
2 c. cooked rice
4 hard boiled eggs (optional)
2 cans cream of chicken soup
1 c. chopped onions
1 tsp. salt
2 tsp. lemon juice
8 oz. can water chestnuts, chopped
Ritz crackers or potato chips

Mix all ingredients and place in casserole dish. Top with crumbled Ritz crackers or potato chips. Bake at 350 degrees for 30 minutes.
