MOM'S FIESTA CASSEROLE 
1 lb. ground beef
1 pkg. taco mix
1 can (16 oz.) refried beans
1 can nacho cheese soup or sauce
1 c. shredded Monterey Jack cheese
1/2 c. pitted black olives
1 c. sour cream
2 green onions
Round tortilla chips

Microwave in 2 quart casserole meat on high for 5 minutes. Stir after 2 minutes. Drain fat, place meat in bowl. Add taco mix and stir. In bottom of casserole spread beans, cover with meat. Pour soup over meat to 1 inch of edge of dish. Sprinkle with cheese and olives. Cook on high 15 minutes. Place sour cream over top and sprinkle with green onions. Serve with taco chips or tortilla chips.

Since microwave ovens vary in power, you may need to adjust your cooking time.
