WILD RICE PILAF | |
1 sm. onion, diced 3/4 c. diced celery 2 tbsp. butter 2 3/4 c. chicken broth 1/2 tbsp. parsley flakes 1/4 tsp. sage 1/4 tsp. basil 3/4 c. long grain white rice, uncooked 1 c. cooked wild rice 1 (4 oz.) can sliced mushrooms; optional To cook wild rice, put 1/2 cup raw rice in pan with 2 to 2 1/2 cups water. Bring to a boil then turn down heat and simmer for 40 minutes or until most of the grains have split slightly. Drain excess liquid. Set aside. Saute onion and celery in butter in large fry pan until onions is clear and celery is tender. Add chicken broth and spices then stir in uncooked white rice. Bring to a boil then reduce heat, cover and simmer for 15 minutes. Add cooked wild rice and mushrooms and stir. Cover again and cook 5-10 minutes or until water is absorbent and rice is tender. |
