BROCCOLI - CHICKEN RICE BAKE 
2-3 chicken breasts, cooked
1/2 bell pepper, chopped
2 tbsp. butter
1 bunch broccoli, cut in bite-size, cooked
1 c. uncooked rice
3/4 c. onion, chopped
2 cans cream of mushroom or cream of chicken soup (1 of each is also good)
1 c. grated cheese

Boil chicken with 1 stalk celery until done. Remove chicken from bones and throw out celery and measure broth. Add enough water for 2 cups liquid, cook rice in this liquid. Saute onion and bell pepper in butter.

In large bowl, stir in rice, onion, pepper, chicken soup and 1/2 of the cheese. Fold in the broccoli. Pour into a buttered casserole. Top with remaining cheese and bake in 350 degree oven for 30 minutes.
