POOR MAN'S SCALLOP CASSEROLE 
1 lb. fish fillets (cod or flounder)

SCALLOP MIXTURE:

2/3 c. butter, melted
1 c. herb seasoned stuffing mix
1/2 lb. sm. scallops
1 (4 oz.) can mushroom stems & pieces, drained (optional)
1 egg
2 tbsp. fresh parsley, chopped
1/4 tsp. salt
2 tbsp. lemon juice
1/4 tsp. hot pepper sauce

TOPPING:

1/2 c. stuffing mix
2 tbsp. butter, melted

Heat oven to 350 degrees. In ungreased 8 inch square baking dish, place fillets. In bowl, mix scallop mixture. Sprinkle scallop mixture over fillets. In same bowl, combine topping ingredients. Sprinkle over scallop mixture. Bake for 30 to 35 minutes or until heated through and fish flakes with fork.
