CHICKEN CASSEROLE 
2 c. cooked cut-up chicken
1/2 c. chopped celery
1/2 c. chopped onion
1 stick butter, melted
1 c. grated sharp Cheddar cheese
2 c. cooked rice or noodles
1 can cream of chicken soup, undiluted
1 can evaporated milk
1 sm. jar mushrooms and juice

Saute celery and onion in butter until clear. Add soup, milk, noodles or rice, chicken and mushrooms. Mix together and put in 2-quart greased casserole dish. Top with grated cheese. Bake for 45 minutes at 350 degrees. This can be made ahead and frozen all but the cheese.
