BEEF AND BROCCOLI STIR - FRY 
3 tbsp. soy sauce
2 tbsp. oyster sauce
1 tbsp. dry sherry
1 tsp. sugar
1 tbsp. cornstarch
1 lb. flank steak, thinly sliced
1 head fresh broccoli, cut into spears
4 tbsp. vegetable or peanut oil
2 tbsp. water
1 clove garlic, minced
1 slice fresh ginger root, minced

Combine soy sauce, oyster sauce, sherry, sugar and cornstarch; marinate steak in mixture 30 minutes. Stir fry broccoli in tablespoons oil over medium-high heat in wok or large skillet, 2-4 minutes. Add water and cook, covered, until crisp tender, 1-2 minutes; remove from wok.

In wok, heat remaining oil over high heat; stir in garlic and ginger. Add steak mixture; stir fry turning constantly, until lightly browned 2-4 minutes. Return broccoli to wok; heat through. 6-7 servings.
