TANGY MUSTARD CAULIFLOWER 
1 med. head cauliflower
1/2 c. mayonnaise
1 tsp. prepared mustard
1 tsp. salt
1/2 tbsp. minced onion
1/2 c. grated Cheddar cheese

In a medium saucepan cover the cauliflower with water and add the salt. Simmer the cauliflower until it is tender. With a slotted spoon transfer it to an 8 x 8 inch baking dish. In a bowl combine the mayonnaise, onion, and mustard, mixing well. Spread the mixture over the top and around the sides of the cauliflower. Sprinkle with the cheese. Bake the cauliflower at 350 degrees for 10 minutes, or until the cheese melts. Serves 4 to 6.
