RUSTIC SAUSAGE SAUCE 
2 tsp. olive oil
1 c. chopped onion
10 oz. hot Italian turkey sausage (casing removed)
1/2 tsp. dried oregano
1/2 c. low sodium chicken broth
1 c. frozen peas
2 tbsp. half & half
1 tbsp. grated Parmesan cheese

Heat oil, add onion, cook, stirring often for 3 or 4 minutes or until tender. Add sausage and oregano. Cook, stirring to break up sausage, for 10 to 12 minutes or until browned. Stir in broth and peas, cover and cook 5 minutes or until peas are tender. Stir in half & half and cheese. Bring to boil. Reduce heat to low and simmer 3 minutes. Serve over hot cooked pasta. Makes 4 servings.
