PEAR STREUSEL PIE 
4 c. sliced pears
1 c. water
1/2 c. sugar
2 tbsp. cornstarch
1/8 tsp. salt
1 tsp. grated lemon rind
1 tbsp. lemon juice
9-10 inch pie crust

Boil pears in 1 cup water, covered, for about 10 minutes. Drain and reserve liquid for making sauce. Mix sugar, cornstarch and salt. Add lemon rind, juice and 1 cup cooking liquid from pears. Cook until thick, stirring constantly. Put pears into uncooked pie crust. Cover with sauce. Sprinkle with streusel topping and bake in a hot oven 425 degrees for 15 minutes. Reduce heat to 350 degrees and bake for about 30 minutes longer. Serve with ice cream.

STREUSEL TOPPING:

1/2 c. brown sugar
1/2 c. flour
1/2 tsp. ginger
1/4 tsp. mace
1/4 c. (1/2 stick soft butter)

Mix sugar, flour and spices. Add to soft butter and stir with fork to crumb consistency.
