PINEAPPLE UPSIDE DOWN CAKE | |
1/4 lb. butter 1 c. brown sugar 1 med. can pineapple slices (save juice) Melt butter slightly in (11 inch round, 3 inch deep) iron skillet. Spread brown sugar over the butter, arrange pineapple slices on top of brown sugar. CAKE BATTER: 3 eggs 1 c. flour 1 tsp. baking powder 1/8 tsp. salt 1 c. sugar 5 tbsp. pineapple juice Beat egg yolks, add sugar, pineapple juice and flour sifted with baking powder. Fold in beaten egg whites. Pour over mixture in skillet and bake in moderate (350 degree) oven. When done, place cake plate on top of skillet and turn over. |
