LEMON AND OIL DRESSING 
Juice of 2 lemons
1/2 c. olive oil
1/4 tsp. oregano
Salt

Combine all ingredients. Beat vigorously until creamy. Serve over lettuce, cooked broccoli, spinach, cauliflower or Brussels sprouts. Store in refrigerator. Makes 1 cup.

VARIATION: Omit oregano. Add 1 mashed garlic clove.
