SIMMERED PORK CHOPS 
4 pork chops, 1/2" thick
1 tsp. salt
1/2 tsp. pepper
1/2 c. flour
3 tbsp. butter
2 c. orange juice

Scrape both sides of chops and cut off excess fat, leaving a 1/8" rim. Mix salt, pepper and flour on low lip dish or on a plate. Coat each side of chop in flour mixture. On medium heat, melt butter in large frying pan. Brown chops in pan at 5 minutes per side. Add 1 1/2 cups of orange juice. Bring to a boil on high heat. Turn heat down to low and simmer chops, uncovered for 45 minutes.
