VEAL SCALOPPINE | |
8 thin veal cutlets 1/2 c. sliced mushrooms 2 eggs, beaten 1/2 pt. sour cream 3 tbsp. butter 3 tbsp. vegetable oil 1/2 c. boiling water Flavored bread crumbs Salt & pepper to taste 1/2 c. sherry (opt.) 1. Beat eggs with salt and pepper. Dip veal into egg mixture and then coat with bread crumbs. 2. Fry veal in oil and butter for about 3 minutes on each side until browned. Remove veal from frying pan. 3. Pour water and mushrooms into oil and butter. 4. Saute mushrooms, salt and pepper to taste. May add more oil and butter if needed. Cook for 10 minutes. 5. Add sour cream and 1/2 cup sherry. 6. Place veal in baking dish. 7. Pour mushroom mixture over veal. Cover with aluminum foil. Bake for 20 to 30 minutes at 350 degrees. |
