20 Ritz crackers, crushed
1 c. sugar
1/2 tsp. baking powder
12 dates or 1/2 c. chopped dates
1 c. pecans, chopped
1 tsp. almond extract
1 tsp. vanilla
3 eggs whites, beaten

Mix together first 7 ingredients; fold in egg whites (which are beaten until very stiff). Bake in buttered pie pan or dish at 300 degrees for 30 minutes. Top with whipped cream or topping.
