CHEESE CAKE GLAZES 
3 tbsp. sugar
1 tbsp. cornstarch
1 c. unsweet pineapple juice
1/4 tsp. grated lemon peel
Whipped cream
Pineapple chunks

STRAWBERRY GLAZE:

2-3 c. fresh strawberries
1 c. water
1 1/2 tbsp. cornstarch
1/2-3/4 c. sugar

Pineapple Glaze: Combine all ingredients except whipped cream and pineapple chunks, in a saucepan and heat while stirring until mixture begins to boil. Cook and stir 1 minute longer or until clear and thick. Cool slightly. Spread over cooled cheesecake. Chill about 2 hours. Garnish with whipped cream and fruit.

Strawberry Glaze: Crush 1 cup of berries. Add water and cook 2 minutes. Mix cornstarch with sugar. Stir into hot berry mixture. Cook gently until clear. Cool slightly. Place remaining berries on cheesecake. Pour berry glaze over top. Chill about 2 hours. Approximately 18 servings.
