OATMEAL COOKIES 
1/2 c. fat
1/2 c. butter
1 1/2 c. brown sugar
1 tsp. salt
1/2 tsp. baking soda
2 eggs
1 tsp. vanilla
2 c. sifted flour
1 tsp. baking powder
2 1/2 c. quick cooking oats

1. Cream the butter; gradually add the sugar about 2 tablespoons at a time and cream until light and fluffy.

2. Add eggs and vanilla. Beat well.

3. Sift together flour, baking powder, salt and soda.

4. Add dry mixture to creamed mixture quickly add stir only until flour is damp.

5. Drop by teaspoon. Bake on slightly greased cookie sheet. Bake at 350 degrees for 12 minutes or lightly brown. Immediately remove from sheet. Makes about 3 dozen.
