APPLE - NUT BREAD 
1/2 c. packed, shredded carrots
1 c. sweetened applesauce
1/2 c. corn oil
1 tsp. vanilla
2 eggs, beaten
3/4 c. granulated sugar
2 c. all-purpose flour
1 tsp. double-acting baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 c. chopped walnuts

Preheat oven to 325°F. Grease and flour 9x5x3-inch loaf pan. Combine carrots, applesauce, oil and vanilla in bowl. Add eggs and sugar, mixing all ingredients together. Mix dry ingredients and nuts together. Stir into applesauce mixture. Mix only until all ingredients are blended. DO NOT OVERMIX.

Pour into prepared loaf pan. Spread batter evenly.

Topping:

1 tbsp. sugar
1/2 tsp. cinnamon

Combine sugar and cinnamon and sprinkle over batter.

Bake at 325°F for 1 hour or until a wooden pick inserted in center comes out clean. Bread should have a crack down the center. Remove from the pan and cool on a rack.

Yield: 1 loaf.

Cooks Note: This makes great French Toast!
