MINCEMEAT COOKIES 
3/4 c. shortening (can be part butter and part Crisco)
1 1/2 c. sugar
3 eggs
1 c. prepared mincemeat
3 c. flour
1 tsp. baking soda
3/4 tsp. salt
1 c. coarsely chopped walnuts

Preheat oven to 350 degrees. Thoroughly cream shortening and sugar. Add eggs, one at a time, beating well after each. Stir in dry, sifted ingredients until well blended. Mix in nuts. Drop by spoonfuls onto cookie sheets and bake 12-15 minutes. Makes approximately 6 dozen.
