SPAGHETTI WITH SHRIMP 
1 lb. cooked deveined shelled shrimp
2 tbsp. olive oil
1/2 c. butter
3-4 gloves of garlic, minced
2 bunches of scallions, sliced in 1/4" pieces
4 big tomatoes, peeled, seeded & diced
1/2 c. parsley
2-3 tbsp. lemon juice
1/2 c. fresh basil, chopped (more to taste)
1/2 tsp. oregano
1/2 tsp. salt
1 lb. spaghetti
1/2 c. grated Parmesan cheese

Put butter and oil in frying pan and saute garlic gently. Then add scallions, tomatoes, parsley, lemon juice, basil, oregano and salt. Heat gently for 5 minutes. Add cooked shrimp and heat through. Serve over spaghetti and sprinkle with Parmesan cheese. Serves six.
