TURKEY-BROCCOLI BAKE | |
2 (10 oz.) pkgs. frozen chopped broccoli 1 tbsp. lemon juice 2 tbsp. butter 1/2 tsp. salt 2 c. milk 1/2 c. shredded cheese (Swiss, Cheddar or Monterey Jack can be used) 2 c. cooked turkey or chicken, cut up 1/2 c. soft bread crumbs 1/4 c. grated Parmesan cheese 1 tbsp. melted butter Prepare broccoli according to package directions. Drain well and mix with lemon juice. Spread in 9 inch round baking dish. In saucepan, melt 2 tablespoons butter. Blend in flour and salt. Add milk all at once. Cook, stirring constantly, until mixture thickens and bubbles. Remove from heat and stir in cheese until melted. Add turkey (or chicken) to this cheese mixture and spoon it all onto broccoli in casserole. Combine bread crumbs, Parmesan cheese and melted butter and sprinkle over casserole. Bake at 350 degrees for 20-25 minutes or until heated through. |
