MY GRANDMA'S RISOTTO 
1 sm. can tomato paste
1/2 c. butter
1/2 sm. onion, finely chopped
2 c. uncooked rice
Salt & pepper
4 c. chicken broth
Parmesan cheese

Saute onion in butter until golden brown. Add tomato paste. Add rice as it thickens. Add chicken broth a cup at a time. Cook until rice is done. Sprinkle Parmesan cheese over rice and serve. You can saute a little garlic with the onion if you like.
