ZUCCHINI CASSEROLE 
2 med. zucchini, sliced
2 med. onions, chopped
1/2 c. cracker meal
1 c. diced Velveeta
2 tomatoes, sliced
Salt & seasoned pepper

Place in buttered casserole, layer of zucchini, onions, dot with butter; add 1/2 cup cheese and sprinkle with half of cracker meal. Repeat. Place layer of sliced tomatoes on top. Cover and bake at 350 degrees for 45 minutes to 1 hour. Serves 6.
