GOULASH ALA VIENNA | |
2 lb. beef (v. lean i.e. top sirloin roast) 2 lb. onions 1/4 lb. butter 2 tsp. marjoram 1 tsp. caraway seeds 1 tsp. lemon rind 2 cloves garlic 1 1/2 tbsp. mild paprika 2 tbsp. tomato paste (Contadina or equivalent) Salt and pepper to season Root starch or flour to thicken Combine marjoram, caraway seeds, lemon rind, and garlic in mortar and crush. In a large skillet melt butter and add tomato paste and the crushed seasonings. Then slice the onions; add and saute until golden. Add paprika and the meat; cut into 3/4 x 1-inch chunks. Cook over medium heat for about 5 minutes to sear meat. Add 1 1/2 cups of water; cover and cook over low heat for 90 minutes or until tender. Season to taste and thicken. |
