BEST APPLE PIE 
6 c. sliced apples
1 c. cider or apple juice
2/3 c. sugar
2 tbsp. cornstarch
1 tsp. lemon juice
1 tsp. vanilla
1 tbsp. butter

Boil sugar and cider; add apples. Cook uncovered about 8 minutes. Drain and reserve syrup. Syrup should equal 1 1/2 cups, if not, add more cider. Mix cornstarch, lemon juice and vanilla and 2 tablespoons cold water. Stir with butter into syrup. Cook until thick and bubbly. Remove from heat. Stir in apples. Line 9 inch pie plate with pastry. Add apples and cover with crust. Sprinkle with sugar. Bake at 400 degrees for 40 minutes until light brown.

DOUGH:

1 1/2 c. flour
1/2 tsp. salt
1/2 c. Crisco
3 or 4 tbsp. water

Cut shortening in flour until like peas. Add water a few drops at a time. Mix with fork and knead. Cover crust.
