COTTAGE CHEESE ROLLS 
2 pkgs. dry yeast
1/2 c. lukewarm water
2 c. cottage cheese
1/4 c. sugar
2 tsp. salt
1/2 tsp. baking soda
2 eggs
4 1/2 c. flour

Dissolve yeast in lukewarm water. Heat cottage cheese until warm. Combine cottage cheese, sugar, salt, soda, eggs, yeast and 1 cup flour in bowl. Beat with electric mixer until smooth, about 2 minutes.

Gradually add enough flour to make a soft dough. Place in greased bowl; turn over to grease top. Cover, let rise in warm place, about 1 1/2 hours.

Turn dough on lightly floured surface, divide dough into 24 equal pieces. Shape each into a ball. Place 24 balls in 2 greased 9-inch pans (round is best). Let rise until doubled, about 45 minutes. Bake at 350 degrees for 20 minutes or until golden brown. Remove from pans, cool on racks. Makes 24 rolls.
