SPINACH ZITI BAKE 
1 (1 lb.) pkg. Ziti
1 (32 oz.) jar spaghetti sauce
1 lb. ground sausage
1 med. onion, diced
16 oz. low fat cottage cheese, small curd
8 oz. Mozzarella cheese, shredded
1/2 c. grated Parmesan cheese
1 egg
1/4 tsp. salt
1/4 tsp. pepper
1 1/4 tsp. Italian seasoning
1 (10 oz.) pkg. frozen chopped spinach, thawed and well drained

Preheat oven to 350 degrees. Cook ziti according to package directions. Drain. In a large skillet, brown sausage until no longer pink. Remove sausage and leave 2 tablespoons fat in the pan. Add onion to skillet and saute. Return sausage to skillet and add spaghetti sauce. Mix well and set aside.

In a mixing bowl, combine cottage cheese, 1/2 the Mozzarella, Parmesan cheese, egg, salt, pepper Italian seasoning and spinach. Spread a thin layer of sauce on the bottom of a deep 4 quart baking dish. Layer with 1/2 cooked ziti, 1/2 the remaining sauce, all of the filling, the remaining ziti and the remaining sauce.

Sprinkle with the Mozzarella cheese, cover and bake 30 minutes. Remove cover and bake 30 minutes longer. Serve piping hot.
