TACO PIE 
3 c. taco chips, crushed
1 (16 oz.) can refried beans
1 lb. ground chuck
1 packet taco seasoning mix
1 c. shredded lettuce
1 lg. tomatoes, chopped
1/2 c. grated cheese (Cheddar)
Taco sauce (optional)

Crush taco chips in paper or plastic bag, using a rolling pin to lightly go over chips 2 or 3 times. Place in pie plate.

Press refried beans against taco chips, using a wooden spoon, to form a shell. Set aside.

Brown ground beef in a mixing bowl. Microwave 5 or 6 minutes on High, stirring occasionally. Add taco seasoning mix and recommended amount of water according to directions on package.

Microwave 3 minutes on High until mixture is at boil. Reduce setting to 6 for 2 to 3 minutes or until mixture thickens. Fill taco and bean crust with beef filling. Microwave 2 to 3 minutes on 8 or until hot. Top with lettuce, tomato, cheese and taco sauce if desired. Cut in wedges and serve.

Since microwave ovens vary in power, you may need to adjust your cooking time.
