ARABIAN SQUASH 
3 lbs. yellow squash
1 tbsp. salt
1 1/2 c. grated cheddar cheese
1 c. cottage cheese
5 eggs, beaten
1 c. bread crumbs
3 tbsp. minced parsley
1/2 tsp. pepper
4 tbsp. melted butter

Wash squash, leave on yellow skin or peel and grate. Mix with salt and let stand 20 minutes. Press out all liquid. Mix squash, cheddar cheese, cottage cheese, eggs, bread crumbs, parsley and pepper.

Pour into buttered casserole (3 qt.). Pour butter over the top. Bake in 350 degree oven, for 1 hour. Serves 6.
