OLD-FASHIONED SOUTHERN EGG NOG 
4 c. milk
3 eggs
1 c. sugar
Pinch of salt
1 tsp. vanilla
1 tsp. rum flavoring
1/4 tsp. cinnamon
1/4 tsp. nutmeg
3 to 4 drops yellow food coloring

Heat milk in saucepan over boiling water, but do not boil. Beat eggs and sugar well. Pour hot milk slowly over egg mixture (will curdle if mixed too fast). Put back in saucepan and cook over hot water 3 to 4 minutes. Add flavorings and salt; beat occasionally while cooling. Chill before serving. Rum or brandy may be added for spirited drink.
