DIVINITY 
2 c. sugar
1/2 c. corn syrup
1/2 c. water
Dash of salt
2 egg whites, beaten stiff
1 tsp. vanilla
1/2 c. nuts or coconut

Combine sugar, syrup, water and salt. Stir until dissolved. Boil to medium ball stage (230 degrees). Pour 1/3 of mixture over stiffly beaten egg whites. Cook remaining syrup to a very hard ball (225 degrees). Pour syrup into egg mixture and continue beating. When mixture holds its shape when dropped from a spoon, add vanilla and nuts. Drop by teaspoonful on waxed paper and cool.

At Christmas time, I chop Maraschino cherries and add to the Divinity. Makes it festive. You can use red and green cherries.
