VEGETARIAN ZUCCHINI | |
2 tbsp. olive oil 1/2 c. onion, chopped 4 oz. fresh mushrooms, sliced 3 med. tomatoes, peeled, cut in chunks 1 tsp. dried basil, crushed 1 clove garlic, minced 1/2 med. green pepper, cubed 3 sm. zucchini, 1/4 inch slices 1/2 tsp. salt 1/4 tsp. pepper 1/4 c. grated Parmesan cheese Heat oil in large non-stick coated fry pan over medium high heat, 1 minute. Saute garlic, onion, green pepper and mushrooms 2 to 3 minutes, stirring frequently. Stir in remaining ingredients, except cheese. Cover and cook an additional 4 to 5 minutes until zucchini is tender, but not soft. Stir occasionally. Sprinkle with cheese. Serve over hot, cooked rice if desired. Makes 2 to 3 servings. |
