WHIPPED BUTTERSCOTCH ICING 
1/3 c. butter
3/4 c. brown sugar
1/4 tsp. salt
1/2 tsp. vanilla
2 1/4 c. sifted confectioners sugar
1/2 c. undiluted Carnation evaporated milk

Blend butter, brown sugar, salt, and vanilla until smooth and fluffy, about 1 minute. Alternately add confectioners sugar and Carnation. Beat briskly until of consistency to spread between layers, on sides and top of cooled cake. Makes icing for two 8 inch cake layers.
