PEANUT BUTTER PIE FILLING 
9 inch baked pie shell
1 c. sugar
2 tbsp. corn starch
1/4 tsp. salt
2 egg yolks
2 c. milk

Mix ingredients together. Stir well. Cook until thickened over low heat (or thicken in microwave). Add 2 tablespoons peanut butter. Pour into baked pie shell. Top with meringue.

MERINGUE:

4 egg whites
1/4 tsp. cream of tartar
6 tbsp. sugar
1/2 tsp. vanilla

Beat egg whites and cream of tartar until foamy. Beat in sugar 1 tablespoon at a time until stiff and glossy. Beat in vanilla.

Since microwave ovens vary in power, you may need to adjust your cooking time.
