SQUASH CASSEROLE | |
Serves 2 1 c. sliced yellow squash 1 tbsp. chopped onions 2 tbsp. low-fat cottage cheese 1/4 tsp. black pepper 1 tsp. grated Parmesan cheese Steam or boil squash and onions until tender. (DO NOT OVERCOOK). Drain and mix in cottage cheese and pepper. Place in baking dish and sprinkle top with Parmesan cheese. Bake at 350 degrees for 30 minutes. |
