SHRIMP CURRY 
1/4 c. plus 2 tbsp. butter
1/2 c. chopped onion
2 tbsp. curry powder
1/4 c. plus 2 tbsp. flour
1 1/2 tsp. salt
1 1/2 tsp. sugar
1/4 tsp. ground ginger
2 c. chicken broth
2 c. milk
4 c. cooked clean shrimp
1 tsp. lemon juice

Melt butter over low heat in heavy saucepan. Saute onion and curry powder in melted butter. Blend in flour and seasonings. Cook over low heat until mixture is smooth and bubbly; remove from heat. Stir in broth and milk, bring to a boil, stirring constantly. Boil 1 minute. Add shrimp and lemon juice, heat.
