CHICKEN AND DRESSING CASSEROLE 
3/4 stick of butter
1 small onion, chopped
1 can undiluted cream of chicken soup
2 1/2 c. chicken stock
1 pkg. herb stuffing mix
3 ribs of celery
1 (2 1/2 -3 lb) broiler chicken

Cook chicken until tender, reserve stock. Cut chicken into bite size pieces. Melt butter in 9 X 13 inch baking dish. Sprinkle the stuffing mix except one cup over the melted butter. Sauté onion and celery in a little butter. Mix with chicken and place on top of stuffing. Spread all of the soup on top. Sprinkle reserved stuffing mix on top. Pour the 2 1/2 cups of chicken broth over all.

Bake at 350 for 35 minutes.
