BAKED ZUCCHINI 
1 lg. zucchini
2 eggs
1/4 c. milk
1 c. bread crumbs
1 c. grated cheese
Croutons

Preheat oven to 350 degrees. Slice zucchini lengthwise. In large kettle, add zucchini to boiling water; cover. Return to boil; cook for 15 minutes. Drain and cool. Scoop out center (seeds and pulp) and drain. Add eggs, milk, bread crumbs, 1/2 cheese, salt and pepper to pulp mixture. Put zucchini shells in 13 x 9 x 2 inch baking dish. Fill centers with pulp mixture. Sprinkle remaining cheese on top of each zucchini half. Put a few croutons on top. Bake in 350 degree oven for 30 minutes. Let set 10 minutes. Slice to serve.
