1 lb. dry pinto beans 2 1/2 qts. water 1/2 c. chopped onion 1 clove garlic, minced 1 lg. piece bacon rind 1 tbsp. chili powder 1/2 tsp. oregano 3-4 Trappey's chili pepper, seeded, chopped 2 tsp. salt Wash beans and soak overnight in cold water; drain. Put beans in a large kettle, add 2 1/2 quarts of water and simmer 1 hour. Add onion, garlic, bacon rind, chili powder, oregano and chili peppers. Cover and simmer 2 hours, adding salt the last hour. Serves 6. |
