CHOCOLATE ZUCCHINI BREAD 
2 c. sugar
3/4 c. oil
3 eggs
2 tsp. vanilla
2 c. shredded zucchini
2 1/2 c. flour
1/2 c. cocoa
2 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 c. milk

In a large bowl, beat sugar, oil and eggs. Add vanilla and zucchini. Mix dry ingredients and add alternately with milk to zucchini mixture. Pour into small (3 1/2 x 6 x 2) loaf pans and bake at 350°F for 30 minutes or until toothpick comes out clean. Allow to stand for 10 minutes and remove from pans and cool. You could also bake this in a 9 x 13 pan for 40 minutes at 350°F.
