TREASURED POTATOES 
8 to 10 medium potatoes (6 c. shredded)
1 c. (4 oz.) Provolone cheese, shredded
1 tbsp. grated onion
1 tsp. seasoned salt
1/2 tsp. pepper
Red pepper to taste
1/4 c. (1/2 stick) butter
1 c. half & half

Boil potatoes, in their skins, until barely tender. Drain and cool completely. (This can be done early in the day or day before.) Chill.

Grate on large side of grater. Combine potatoes with cheese, onion, and seasonings. Taste for seasoning. Put in baking dish. Dot with butter. Pour half and half over potatoes when ready to bake. Bake in 375 degree oven for about 45 minutes to one hour or until brown and crispy. Serves 4 to 6. Goes well with barbecue to prime rib.
