CREAMY CELERY BAKE 
4 c. thinly sliced celery
4 tbsp. butter
3 tbsp. flour
1 tsp. salt
1 c. milk
1 (3 oz.) can chopped mushrooms
2 tbsp. chopped green pepper
2 tbsp. chopped pimento
1 c. sharp cheese, shredded
1 c. soft bread crumbs
2 tbsp. melted butter

In medium skillet, cook celery in 4 tablespoons butter until tender, about 5 minutes. Push celery to the side; stir in flour and salt. Add milk all at once, cook and stir until mixture is thick and bubbling. Stir in mushrooms, green pepper and pimento. Add cheese and stir until m melted.

Transfer mixture to a 10 x 6 x 1 1/2 inch baking dish. Combine bread crumbs and the 2 tablespoons melted butter and sprinkle over casserole. Bake in 350 degree oven for 20 minutes. Makes about 8 servings.
