VEGETABLE GUMBO 
1 pkg. (16 oz.) vegetable gumbo mix
1 onion, chopped
1 clove garlic, chopped
1 can stewed Italian tomatoes
Salt and pepper to taste
Dash of cayenne
1/4 c. water

Saute onions and garlic in 1/4 cup water. Add tomatoes, vegetable mix and 1/2 tomato can of water. Simmer until tender.

Serving suggestions: serve on a bed of rice, or add cooked macaroni to mix and serve with a salad and garlic toast.
