VEGETABLE GUMBO 
3 slices bacon, diced
1/4 c. yellow onion, finely chopped
1/4 c. celery, finely chopped
1 (1 lb.) can tomatoes, do not drain
1 (10 oz.) pkg. frozen whole baby okra (thaw only to separate pods, slice in 1 inch pieces)
1 (10 oz.) pkg. frozen whole kernel corn
1 tsp. salt
1/8 tsp. pepper
1 pinch powdered saffron
1 pinch file powder
2 c. hot cooked rice

Fry bacon light brown, (2 to 3 minutes). Add onions, celery. Saute 8-10 minutes or until golden. Add tomatoes and okra. Cover and boil gently 3-4 minutes. Add corn, salt, pepper, saffron. Cover and boil 3-4 minutes longer until okra is tender. Stir in file powder. Ladle over hot rice and serve.
