1 c. corn meal 3 c. milk 2 tbsp. butter 2 tsp. baking powder 1 tsp. salt 2 eggs, well beaten Combine cornmeal and milk in pan and cook slowly until the consistency of mush (about 10-15 minutes). Stir constantly to keep from lumping or burning. Stir into the cornmeal mush, the butter, salt, baking powder, stirring constantly. Add eggs. Mix. Pour into well greased casserole dish and bake at 350 degrees about 30-45 minutes. Serve with butter or gravy while hot. |
