CARIBBEAN PUMPKIN SOUP | |
2/3 c. chopped onion 2/3 c. chopped red bell pepper 2 tsp. minced garlic 1 tsp. ground cumin 2 1/2 c. chicken broth 1 can (15 oz.) pumpkin 1 can (15 oz.) black beans, drained and rinsed 1 can diced tomatoes Salt and pepper to taste Sour cream Cilantro Coat a medium saucepan with cooking spray; heat over medium heat. Add onion and bell pepper and sauté about 5 minutes. Stir in garlic and cumin and cook 1 minute. Add remaining ingredients. Bring to a boil; reduce heat, cover and simmer 5 minutes to blend flavors. Top with sour cream and cilantro. |
