CREAMY CHEESE ENCHILADAS 
10 flour tortillas
1/2 c. grated Monterey Jack cheese
Chopped green onions, with tops
Shredded chicken or turkey

SAUCE:

1/4 c. butter
1/4 c. flour
1 can chicken broth
1 c. sour cream
1 can chopped green chilies

Fill each of the 10 flour tortillas with grated Monterey Jack cheese, green onions and shredded chicken or turkey. Roll up and place in a 9 x 12 pan. Make sauce by melting butter, add flour and stir add 1 can chicken broth and heat until thick over medium heat. Remove from heat and add 1 cup sour cream and chopped green chilis. Pour over tortillas and bake for 20 minutes at 350 degrees.
