APRICOT PIE 
1 pkg. (box) dried apricots
1 1/2 c. sugar
1 1/2 tbsp. cornstarch
Pastry for 2 crust pie

Cover apricots with water and simmer until tender and plump. Add the sugar; then thicken with the cornstarch. Let cool. Put the apricot mixture in a pie crust, top with crust and bake. Makes a 9 inch pie.
