BAKED SHRIMP 
1 lb. shrimp, shelled & deveined
1/4 c. (1/2 stick) butter
1/4 c. vegetable oil
1 tbsp. lemon juice
1/4 c. chopped shallots
2 cloves garlic, chopped fine
Salt & pepper to taste

In a small roasting pan or broiler proof casserole, melt butter. Stir in oil, lemon juice, shallots, garlic and salt and pepper. Add shrimp, turn to coat with mixture. Broil 3 inches from heat for 5 minutes on each side.
