GREEN BEAN CASSEROLE 
2 tbsp. butter
1 tbsp. flour
1 1/2 c. tomato juice or V-8
1 qt. whole cooked green beans
1 onion, finely chopped
1 c. grated Cheddar or Swiss cheese
1 green pepper, finely chopped (optional)
1 c. bread crumbs

Preheat oven to 275 degrees. Melt butter, stir in flour, blend in tomato juice, stir until thickened. Combine the beans, cheese, onion, pepper and mix well. Pour into greased baking dish. Pour tomato mixture over all. Sprinkle with bread crumbs and bake for 45 minutes.
